Abstract

The article presents a survey of biosensors applied in the determination of selected monosaccharides (glucose, fructose, galactose and xylose), disaccharides (saccharose, lactose, maltose and lactulose) and polysaccharides (starch, glycogen and pullulane). A concise description of constructional details of a biosensor is included: connection of the biological part to the physicochemical transducer. The enzyme systems used in detection of saccharides are described in detai1. Attention was directed to the application of oxidative enzymes (oxidase or dehydrogenase) in detecting monosaccharides, further to the construction of multienzyme biosensors for the detection of di- and polysaccharides and to practical applications of biosensors mainly in food analysis.
